How to clean an espresso machine

Coffee oil goes rancid. Everything on this page is about getting it out before it ends up in the cup.

Coffee is oily. Those oils coat the shower screen, the group head, the portafilter and the basket, and within days they oxidize and turn rancid. From then on every shot passes through them. It tastes stale and slightly bitter, and it is not something you can grind or dose your way out of.

This is a different job from descaling, which removes mineral scale from inside the machine. Different problem, different product, different schedule.

Backflushing coffee oils out of the group

The standard espresso-machine detergent tablet. It removes coffee oil residue, which is a different job from descaling.

Cleaning and descaling are two different tasks with two different products. Cleaner removes coffee oils from the group head and baskets; descaler removes mineral scale from the boiler.

Using descaler where cleaner is needed leaves the oils, and the shots keep tasting stale and bitter no matter how new the beans are.

What it does well

  • Does the job the machine manual asks for
  • Tablets are pre-dosed, so there is nothing to measure

What you give up

  • Only backflushable machines can use the full procedure
  • Not a descaler — you need both

Skip it only if your machine's manual specifically forbids backflushing — some entry machines do. Wipe and soak instead.

A steam wand or milk system that has had milk in it

An alkaline cleaner for milk residue. Necessary for automatic milk systems, useful for a manual wand you have not been perfect with.

Milk protein bakes onto a hot wand within seconds. Purging and wiping the wand immediately after every use prevents almost all of it, for free.

Where a cleaner earns its place is automatic milk systems with tubes you cannot reach with a cloth.

What it does well

  • Reaches the parts of a milk system a cloth cannot
  • Cheap per use

What you give up

  • Unnecessary if you wipe and purge a manual wand every time

Skip it if you have a manual wand and you already purge and wipe it after every drink. That habit does the same job for nothing.

Every day, fifteen seconds

  1. **Knock the puck out and rinse the basket** under the tap. Wet grounds in a warm basket go rancid fast.
  2. **Wipe the shower screen** with a damp cloth, portafilter removed.
  3. **Run a two-second flush** through the group head to clear loose grounds.
  4. **Purge and wipe the steam wand** immediately after milk — see steam wand care.

Every week to month

A proper clean with an espresso machine detergent. How you do it depends on whether your machine can backflush.

  • **If it can backflush** (it has a three-way solenoid valve — check the manual), use a blind basket and a cleaning tablet. Full method on backflushing.
  • **If it cannot** — which includes most entry-level machines — soak instead. Dissolve a tablet in hot water and soak the portafilter, both baskets and the shower screen if it is removable, for around twenty minutes. Scrub with a soft brush, rinse very thoroughly, and run a tank of clean water through.

The parts everyone forgets

  • **The underside of the shower screen.** It is the surface with the most coffee oil on it and the one you never see. Remove it if the design allows.
  • **The group gasket edge.** Old grounds pack in around it, which eventually causes leaks around the portafilter.
  • **The drip tray drain hole.** Blocks quietly, then overflows.
  • **The grinder.** Coffee oils go rancid in a grinder just as readily. Brush the chute weekly and remove the burrs monthly if the design allows.

What clean tastes like

If your shots have been getting progressively duller and slightly bitter over a few weeks and the beans have not changed, clean the machine before you touch the grinder. It is the fastest thing to rule out and it is the answer more often than people expect.

Questions people actually ask

How often should I clean my espresso machine?

Rinse the basket and wipe the shower screen daily, and do a proper detergent clean weekly to monthly depending on how much you use it. That is separate from descaling, which happens every one to three months.

Can I use dish soap to clean espresso equipment?

Better not to. It leaves a residue that affects both taste and how the coffee behaves in the basket. Espresso machine detergent rinses clean; hot water and a soft brush are the next best thing.

What are espresso machine cleaning tablets for?

They dissolve coffee oils from the group head, portafilter and baskets. They are a detergent, not a descaler — they do nothing about mineral scale.

How do I clean the shower screen?

Wipe it daily with the portafilter removed, brush it weekly, and if it unscrews, remove it monthly and soak it in detergent. The underside collects the most oil and is the surface you never see.
